On hot days, there’s hardly anything better than a cool juice spritzer. But if you’re tired of apple or cherry juice, rhubarb might be a good alternative.
Sweet and tangy, rhubarb spritzer is truly refreshing. This delicious and fizzy drink can be easily made at home. The Federal Center for Nutrition (BZfE) explains how to incorporate rhubarb into the spritzer.
The Right Mixing Ratio Is Important
The stalks are cut into small pieces, which are then placed in a pot with a little water. The rhubarb simmers for 15 to 30 minutes until it softens. The mixture is strained through a fine sieve to let the juice drip out.
After cooling, it can be mixed with sparkling water to make a spritzer. The BZfE recommends the following ratio: one part rhubarb juice, three parts water. However, this drink might still be too sour for many. You can sweeten it with syrup or sugar—or add sweetness while simmering the rhubarb.

For a finishing touch, you can add mint, lime slices, and ice cubes to the spritzer. If you love both rhubarb spritzer and iced tea, you can combine the two: Simply mix the rhubarb juice with cooled green or hibiscus tea instead of sparkling water.
Rhubarb Syrup Is Also Easy
With syrup, it’s all about personal taste. You might need to experiment a few times to find the right balance. The syrup uses the rhubarb peel, making it not only healthy and delicious but also sustainable.
Basic Recipe:
- 200 grams of rhubarb peels
- 100 grams of sugar
- 500 milliliters of water
Place the peels in a pot with water, ensuring they are fully covered. Bring the mixture to a boil. Then let the liquid simmer for about 20 minutes with the lid on. Pour the hot syrup into bottles.
