Want to bake cookies on a whim but don’t have eggs on hand or prefer to skip them? No problem! You can bake without eggs. How do you proceed?
Baking often requires an egg–sometimes even several. What do you do if you don’t have any in the fridge? Or if you follow a vegan diet and therefore avoid eggs? Nowadays, it’s not an issue, as there are several foods that can easily replace eggs. Find out which substitutes are available and how to use them correctly in baking and cooking here.
What can you use to replace an egg?
Eggs can be replaced with starch, soy, or chickpea flour mixed with water. This is pointed out by the Consumer Center NRW. One to two tablespoons of these, mixed with two to three tablespoons of water, replace a medium-sized egg.

Alternatively, you can use 60 grams of applesauce or half a mashed banana, depending on what better suits the flavor of the baked goods. If you have ground flax or chia seeds on hand, you can mix one tablespoon of them with three tablespoons of water and let it swell to replace the egg in the recipe.
And how do you make icing without eggs?
Thinking of a homemade gingerbread house and wondering how to make the snow-white sugar glue? Without egg whites, it works with the drained liquid from canned or jarred chickpeas (aquafaba). This is whipped and then mixed with powdered sugar. And from the remaining chickpeas, you can create a delicious cookie dough when pureed.
