Ginger candies–what you need for the recipe
- About five centimeters of ginger
- The juice of an organic lemon
- 200 grams of sugar–whether brown or white doesn’t matter
- 50 grams of dextrose
- A tablespoon of honey
- 50 milliliters of water
- Small silicone or muffin molds for the candies
- A bit of powdered sugar
How to make ginger candies?
- First, squeeze the lemon.
- Peel the ginger, preferably with a spoon, and cut it into very small pieces. Alternatively, you can grate it.
- Next, bring the lemon juice, water, ginger, and honey to a boil and let it simmer for 10 minutes to create a decoction.
- Strain the decoction through a sieve.
- You only need 80 milliliters of the decoction–the rest can be diluted with water and drunk.
- Next, combine the sugar, dextrose, and decoction in a pot and dissolve over low heat while stirring.
- Let this mixture simmer over medium heat until it becomes a thick, light brown mass.
- Use a stick test to determine if the future candy has the right consistency. If it does, quickly pour the mass into molds.
- The molds should be filled no more than halfway, or the candies will be too thick.
- Let the candies sit until they are fully hardened.
- The final step is to press the candies out of the molds and roll them in powdered sugar to prevent them from sticking together.
Note: In a stick test, a wooden stick is first inserted into the mass and then into ice-cold water. If the candy mass hardens on the stick, it is suitable for candies.
