Most people store their groceries in the refrigerator right after shopping, thinking they’ll stay fresh longer. But for many foods, this is actually wrong and has the opposite effect: They spoil faster. myHOMEBOOK reveals which foods do not belong in the refrigerator.

In Germany alone, around 6.5 million tons of food end up in the trash each year—that’s about 78 kilograms per person. According to the Consumer Center, about 60 percent of this waste could have been avoided. A large part of the responsibility lies with us, consumers. We often cook too much or store food incorrectly. Many products don’t belong in the refrigerator at all.

1. Avocados

If you buy an avocado when it’s very ripe, it can be stored in the fridge. Otherwise, it shouldn’t be there. Low temperatures interrupt the ripening process. It’s best to store avocados at room temperature so they can ripen properly.

2. Bread

Cold is a killer for bread. Instead of lasting longer, bread dries out and becomes hard. It should be stored in a bread box or a dark cabinet. It’s important that air can circulate to prevent mold from forming.

3. Coffee

With coffee grounds and beans, it’s a matter of taste! If coffee is stored in the fridge, it loses its aroma. But that’s not all: Coffee is almost magnetically attracted to other smells—and absorbs them. This means the coffee aroma would mix with those of other foods, spoiling the taste.

4. Carrots

Carrots quickly become limp, shriveled, and watery in the fridge. They do like it a bit cooler–but the fridge is definitely the wrong place. Be careful not to store carrots near tomatoes, pears, or apples, as they can develop a bitter taste.

5. Bell Peppers

Bell peppers should not be stored in the fridge after purchase—otherwise, they lose their freshness and become shriveled. When chilled, bell peppers lose moisture and aroma. While they do prefer it a bit cooler overall, a pantry or clay pots with holes are better options than the fridge.

6. Mustard & Ketchup

Ketchup, mustard, and other sauces often contain vinegar, salt, and sugar—perfect preservatives. This means they don’t need to be refrigerated when unopened—and even after opening, they can be kept unrefrigerated. However, if you don’t use the sauces quickly, it’s recommended to store them in the fridge. They won’t spoil, but ketchup and mustard can lose color.

7. Tomatoes

Tomatoes definitely don’t belong in the fridge! They have a high water content. In the fridge, they would lose their aroma—and become mealy and tasteless. Additionally, tomatoes shrivel faster at low temperatures.

8. Lemons

Lemons and other citrus fruits don’t like the cold—after all, they come from warm regions. If they get a cold shock, they might stop ripening and become shriveled. Therefore, lemons, grapefruits, or oranges should be stored at room temperature.

What Actually Belongs in the Fridge?

While there are many foods that don’t belong in the fridge, even more must be refrigerated. Especially perishable items like fish, meat, or dairy products. Additionally, apples and pears stay fresh longer when stored in the fridge.

To avoid food waste, the Consumer Center also has a few tips:

  • Use a shopping list
  • Pay attention to package sizes
  • Choose consciously
  • Cool properly
  • Store well
  • Note expiration dates
  • Regularly check supplies
  • Use leftovers
  • Order moderately
